chuck roast

  1. preheat oven to 325F.
  2. season the chuck roast cubes with garlic powder, onion powder, rosemary, pepper, and salt. heat olive oil in a large skillet over medium-high heat. sear the chuck roast on all sides until browned.
  3. add the sliced onion and chopped garlic to the pan. cook until the onions are translucent.
  4. pour in the red wine and beef broth, scrape up the browned bits from the pan. transfer the cubes and liquid to an oven safe casserole dish, cover tighly with foil.
  5. transfer the pan to the oven and bake for 2-3 hours, or until the chuck roast is fork-tender.

mac and cheese

  1. in a crockpot, combine the cubed chuck roast and liquid, uncooked macaroni, shredded cheddar cheese, diced tomatoes, cheddar cheese soup, evaporated milk, liquid smoke, paprika, garlic powder, onion powder, salt, and pepper.
  2. stir well to combine all ingredients. cover and cook on low for 2-3 hours, or until the macaroni is tender and the cheese is melted. Stir occasionally to prevent sticking.
